Ingredients

Banana bread

  • 45 g grapeseed oil, plus extra to grease
  • 50 g black sesame seeds
  • 50 g white sesame seeds
  • 100 g dried figs
  • 150 g water
  • 40 g unsalted butter
  • 300 g ripe bananas (approx. 3), cut into pieces, plus 1 extra banana cut into halves, to decorate
  • 2 eggs
  • 170 g caster sugar
  • 200 g plain flour
  • 2 tsp cornflour
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • ½ tsp bicarbonate of soda
  • 1 pinch sea salt
  • raw cashew nuts, to sprinkle (approx. 5 tbsp)

Chai crème fraîche

  • 1 tbsp coconut sugar
  • 1 orange, peel only, no white pith and juice of half an orange (approx. 40 g)
  • 2 tbsp chai powder (see Tips)
  • 400 g crème fraîche
