Maple Hollandaise Sauce

  • 20 - 30 g granulated maple sugar, to taste (see Tip)
  • 1 tbsp water
  • 1 tbsp lemon juice
  • 160 g butter, unsalted, room temperature, cut into cubes (1-2 cm)
  • 3 egg yolks
  • 1 pinch salt, to taste
  • 1 pinch black pepper, ground, to taste

Poached Eggs

  • 4 eggs, large
  • 1700 g water
  • 50 g vinegar
  • 2 English muffins
  • 80 - 100 g smoked salmon, cold smoked, sliced to serve (see Tip)
  • chives, fresh, thinly sliced
