Ingredients

Dough

  • 220 g water
  • 1 tsp sugar
  • 2 tsp dried instant yeast
    or 20 g fresh yeast, crumbled
  • 20 g olive oil, plus extra for greasing
  • 400 g strong white bread flour, plus extra for dusting
  • 1 tsp salt

Paneer Topping

  • 250 g paneer, diced (1-2 cm)
  • 200 g mixed peppers, diced (1-2 cm)
  • 200 g onions, diced (1-2 cm)
  • 2 garlic cloves
  • 150 g plain yoghurt
  • 1 ½ tsp ground coriander
  • 1 ½ tsp chilli powder
  • 1 tsp ground turmeric
  • 1 ½ tsp garam masala
  • 2 tsp freshly squeezed lemon juice
  • 1 tsp salt

Tomato Sauce

  • 3 garlic cloves
  • 15 g fresh basil leaves
  • 2 tsp dried oregano
  • 370 g tomatoes, deseeded, cut in pieces
  • 20 g olive oil
  • 1 tsp sugar
  • ¾ tsp salt
  • ½ tsp ground black pepper

Finalisation

  • 200 g mozzarella, cut in pieces
  • dried chilli flakes, for garnishing (optional)
