  • 6 fresh portobello mushrooms, large, caps only (Ø 8-10 cm)

  • 4 sprigs fresh lemon thyme, leaves only
  • 2 tsp grated lemon zest
  • 80 g olive oil, plus 1 tsp
  • 100 g carrots, diced (1 cm)
  • 100 g Granny Smith apples, diced (1 cm)
  • 2 garlic clove
  • 50 g lemon juice
  • 20 g soy sauce
  • 150 g red pepper, cut in strips
  • 150 g green pepper, cut in strips
