Ingredients

Sauce

  • 100 g soy sauce
  • 25 g brown rice vinegar
  • 1 Tbsp toasted sesame oil
  • 5 - 10 dashes Tabasco to taste
  • 1 tsp toasted sesame seeds

Dumpling Wrappers

  • 150 g water (optional)
  • 300 g plain flour plus extra for dusting
  • 10 g water (optional)

Filling

  • 10 g fresh root ginger peeled, cut in round slices (2 mm)
  • 5 spring onions sliced (3 mm)
  • 150 g medium raw prawns, peeled
  • 1 Tbsp toasted sesame oil
  • 2 Tbsp Shaoxing rice wine
    or 2 Tbsp sherry vinegar
  • 2 Tbsp soy sauce
  • 1 pinch ground white pepper

Assembly and Cooking

  • 1 carrot sliced (2 mm)
  • 500 g water for steaming
