- 60 g olive oil, plus extra for drizzling
- ½ tsp salt

- 200 g carrots, cut into slices (5 mm)
- 200 g zucchini, cut into slices (7-10 mm)
- 150 g red capsicum, cut into pieces (2-3 cm)
- 100 g frozen green peas
- 200 g feta cheese, cut into small cubes (5 mm)
- 2 tsp fresh flat-leaf parsley, chopped, for garnishing (optional)
