Ingredients

  • 350 g aubergines, cut in pieces (5 cm)

  • 15 g nutritional yeast flakes
  • 1 Tbsp lemon juice
  • 1 pinch dried chilli flakes
  • 180 g extra virgin olive oil
  • 50 g dairy-free spread, plus extra for greasing
  • 50 g plain flour
  • ½ tsp ground nutmeg
  • ½ tsp Dijon mustard
  • 500 g soya milk, unsweetened (see tip)
