Ingredients

Bagels

  • olive oil, for greasing
  • 920 g water, plus an extra 1 tbsp
  • 250 g full cream milk
  • 1 tbsp raw sugar
  • 3 tsp dried instant yeast or 30 g fresh yeast
  • 520 g baker's flour, plus extra for dusting
  • 3 tsp sea salt
  • 1 egg yolk
  • 1 tbsp white sesame seeds or poppy seeds, for sprinkling (optional)

Bacon jam

  • 3 garlic cloves
  • 200 g red onion, cut into eighths
  • 500 g smoked bacon, cut into pieces (1-2 cm)
  • 150 g brewed coffee
  • 60 g apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tsp orange zest, finely grated
  • 60 g orange juice
  • 2 tbsp brown sugar
  • ¼ tsp ground ginger
  • 1 tsp dried thyme
  • 1 star anise
  • 2 pinches ground black pepper, to taste
  • 40 g bourbon

Eggs

  • olive oil, for greasing
  • 500 g water
  • 4 eggs (depending on number of serves)
