Ingredients

Brioche

  • 50 g white sugar
  • 1 lemon, peel only, no white pith
  • 120 g milk
  • 30 g unsalted butter
  • 2 tsp dried instant yeast
  • 1 egg
  • 320 g baker's flour
  • ½ tsp sea salt

Caramel sauce

  • 250 g white sugar
  • 200 g pouring (whipping) cream
  • 30 g water
  • 1 tsp lemon juice
  • 30 g unsalted butter

Assembly

  • 120 g cream cheese, softened
  • baker's flour, to dust
  • 1 tbsp cinnamon sugar, to sprinkle
  • 1 yellow peach, ripe, unpeeled, stone removed and cut into 12 wedges
  • 1 tbsp flaked almonds, toasted (see Tips)
