Ingredients

Parmesan Bread Crumbs

  • 1 oz Parmesan cheese
  • ⅛ tsp black peppercorns
  • 3 oz panko bread crumbs
  • 1 tbsp dried parsley

Caesar Dressing

  • 2 oz Parmesan cheese, cut into pieces
  • ⅛ tsp black peppercorns
  • 2 garlic cloves
  • 4 oz neutral oil, e.g. grapeseed, canola, vegetable
  • 2 egg yolks, from pasteurized eggs
  • 2 - 3 anchovies, preserved in olive oil
  • 1 oz lemon juice
  • 1 tbsp water
  • 1 tsp Dijon mustard
  • ⅛ tsp salt, optional

Salad

  • 5 oz lacinato kale, center rib removed, sliced (1 in.)
  • ½ oz lemon juice
  • freshly ground black pepper, to garnish
  • Parmesan cheese, shaved, to garnish
  • lemon, cut into wedges, to serve
