Ingredients

  • 28 oz chicken thigh, boneless and skinless, cut into pieces (1½ in.)
  • 1 ½ tsp dried ground cumin
  • 1 tsp dried oregano
  • 1 tsp ground coriander
  • 1 tsp salt
  • ¼ tsp ground black pepper
  • ¼ tsp ground cayenne pepper
  • 4 oz yellow onions, cut into pieces
  • 1 poblano pepper, destemmed and deseeded, cut into pieces
  • 1 jalapeño chili, destemmed and deseeded (optional)
  • 2 garlic cloves
  • ½ oz olive oil
  • 1 can cannellini beans, drained (15 oz)
  • 24 oz chicken stock
  • 1 oz lime juice
  • 4 tbsp corn starch
  • 3 tbsp water
  • 1 can pinto beans, drained (15 oz)
  • 1 can sweet corn kernels, drained (15 oz)
  • 2 avocados, sliced
  • chopped fresh cilantro, to serve
  • 2 limes, cut into wedges
  • 6 oz shredded mozzarella (low-moisture)
