  • 150 g raw hazelnuts
  • 150 g dried apricots
  • 300 g onions quartered
  • 20 g garlic cloves
  • 60 g olive oil plus extra for drizzling
  • ½ tsp salt
  • 200 g couscous
  • 1 heaped tsp vegetable stock paste, homemade
    or 1 vegetable stock cube (for 0.5 l) crumbled
  • 600 g water
  • 200 g carrots sliced (5 mm)
  • 200 g courgettes sliced (7-10 mm)
  • 150 g red peppers cut in bite-size pieces
  • 100 g frozen peas
  • 200 g feta cheese diced (5 mm)
  • 2 tsp fresh parsley chopped, to garnish (optional)
