Ingredients

  • 1 - 2 garlic cloves
  • 120 - 150 g onion, cut into quarters
  • 1 chilli, dried, without stalk and seeds
  • 100 g green pepper, cut into small pieces
  • 100 g red pepper, cut into small pieces
  • 50 g extra virgin olive oil
  • 250 g green asparagus, without the hard part and chopped into 2-3 cm pieces
  • 150 g button mushroom, fresh, sliced
  • 150 g ripe tomatoes, cut into small pieces
  • 1 pinch saffron threads
  • ½ tsp food colouring, yellow (see tip)
  • 800 g water
  • 2 stock cubes (each for 0.5 l)
    or 1 - 2 tsp salt
  • 350 g fideua noodles
  • 50 g green peas, frozen
