Ingredients

  • 7 ½ oz heavy whipping cream, divided
  • 36 oz water, divided
  • 1 tsp lemon juice
  • 1 oz unsalted butter, cold and in one piece (approx. 1 in. x 1 in.)
  • 1 tbsp vinegar

Chocolate Base

  • 7 oz dark chocolate, cut into pieces
  • 2 oz unsalted butter, cut into pieces
  • 7 oz Paillete feuilletine
    or 7 oz waffle cones, broken into pieces (1 in.)

Vanilla Cream

  • non-stick cooking spray
  • 10 oz whole milk, divided
  • 1 tbsp unflavored gelatin powder, unsweetened
  • 1 vanilla bean pod
  • 3 large eggs
  • 3 oz sugar
  • 1 oz corn starch
  • 10 ½ oz heavy whipping cream, chilled

Chocolate Glaze

  • 12 oz dark chocolate (70% cocoa), cut in pieces
  • 1 ½ oz butter, cut in pieces
