  • 5 oz confectioners sugar
  • 2 oz almond flour
  • 1 oz Dutch-processed cocoa powder
  • ⅛ tsp salt
  • 6 oz unsalted butter, diced, chilled
  • 2 large eggs

Milk Chocolate Ganache

  • 9 ½ oz Valrhona chocolate discs, Jivara milk chocolate 40% (see Tip)
    or 9 ½ oz milk chocolate 40%, high quality chips or chunks
  • 6 ½ oz heavy whipping cream
  • ½ oz glucose (see Tip)
