Ingredients

Suet pastry

  • 200 g plain flour
  • 100 g suet mix (see Tips)
  • 5 sprigs fresh thyme, leaves only
  • 1 tsp mustard powder
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • 120 g cold water

Steak and kidney filling

  • 20 g oil
  • 1 brown onion, cut into halves
  • 600 g gravy beef, cut into pieces (3 cm)
  • 200 g lamb kidneys, cut into quarters and white cores removed
  • 2 carrots, peeled and cut into pieces (2-3 cm)
  • 1 tbsp plain flour
  • 1 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Vegetable stock paste (see Tips)
  • 100 g water
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 200 g fresh mushrooms, cut into slices

Assembly

  • butter, for greasing
  • 2200 g water
