  • 2 oz shallots, cut into pieces
  • 2 oz unsalted butter, in pieces, plus extra to grease
  • 1 tbsp Dijon mustard
  • 1 tsp fresh thyme leaves
  • 2 tsp salt
  • 1 tsp white pepper
