Ingredients

Bao buns

  • 125 g water
  • 1 tbsp plant-based milk of chioce
  • 250 g plain flour
  • 2 tsp dried instant yeast
  • ¼ tsp baking powder
  • ¼ tsp bicarbonate of soda
  • 1 pinch caster sugar
  • ¼ tsp sea salt
  • vegetable oil, to grease

Hoisin banana

  • 1 garlic clove
  • 250 g onion, cut into halves, then cut into slices
  • 30 g vegetable oil, plus extra to grease
  • ½ tsp Chinese five spice powder
  • ¼ - ½ tsp dried chilli flakes
  • 4 bananas, peel only (see Tips)
  • 60 g hoisin sauce
  • 2 tbsp fresh coriander leaves, torn
  • ¼ tsp sea salt
  • plain flour, to dust
  • 500 g boiling water

Assembly

  • 2 Lebanese cucumbers, sliced into matchsticks
  • 2 fresh mango (approx. 350 g) , sliced into matchsticks
  • 2 tbsp rice wine vinegar
  • 1 tbsp maple syrup
  • 1 tsp sesame oil
  • 1 fresh red chilli, deseeded and thinly sliced
  • 1 lime, zested and juiced
  • 1 ½ tbsp roasted unsalted peanuts, coarsely chopped, to sprinkle
  • fresh coriander leaves, to garnish
  • spring onions/green onions, sliced, to serve
