  • 150 g caster sugar
  • 10 g honey
  • 1040 g water
  • 50 g vinegar

Brioche Buns

  • vegetable oil, for greasing
  • 350 g strong white bread flour
  • 80 g caster sugar
  • 5 g fine sea salt
  • 20 g whole milk
  • 4 medium eggs
  • 2 tsp dried instant yeast (8 g)
    or 20 g fresh yeast, crumbled
  • 170 g unsalted butter, diced
