Ingredients

Pizza dough

  • olive oil, for greasing
  • 220 g water
  • 1 tsp sugar
  • 20 g fresh yeast, crumbled or 2 tsp dried instant yeast
  • 400 g baker's flour
  • 1 tsp sea salt
  • 30 g olive oil

Pizza bianca with zucchini and mozzarella

  • 2 sprigs fresh rosemary (approx. 10 cm long), leaves only
  • 200 g mozzarella cheese, cut into cubes (3 cm)
  • 1 garlic clove
  • 400 g zucchini (approx. 1½ zucchini), cut into pieces
  • 20 g olive oil
  • 1 pinch sea salt
  • 2 pinches ground black pepper

Caramelised onion, ham, tomato and mozzarella

  • 200 g mozzarella cheese, cut into cubes (3 cm)
  • 2 garlic cloves
  • 30 g olive oil
  • 400 g canned diced tomatoes
  • 1 tbsp tomato paste
  • 1 tbsp fresh oregano, leaves only
  • ¾ tsp sea salt
  • 250 g red onion (approx. 1½ onions), cut into halves
  • 20 g balsamic vinegar
  • 50 g raw sugar
  • 100 g shaved ham, cut into thin slices
  • 1 fresh tomato, finely diced

Smoked salmon, capers, rocket and lemon and yoghurt dressing

  • 150 g natural yoghurt
  • 1 tbsp lemon juice
  • 1 - 2 tsp full cream milk
  • 1 pinch sea salt, to taste
  • 1 pinch ground black pepper, to taste
  • 20 g olive oil
  • 200 g smoked salmon, cut into thin slices
  • 2 tbsp pickled capers
  • 40 g rocket leaves, for garnishing
