Ingredients

Garlic Herb Mayo

  • 200 g olive oil
  • 2 garlic cloves
  • 15 g mixed herbs, fresh (e.g. parsley, thyme, mint), cut in pieces
  • 3 egg yolks, from large eggs
  • 30 g lemon juice
  • ½ tsp fine sea salt
  • 1 pinch ground black pepper

Lamb Burgers

  • 120 g onions, quartered
  • 10 g fresh mint leaves
  • 10 g fresh parsley leaves
  • 1 fresh red chilli, halved, deseeded if preferred
  • 1 garlic clove
  • 500 g lamb mince, broken in pieces
  • 200 g feta cheese, crumbled
  • 5 g ground coriander
  • 2 pinches fine sea salt
  • 1 pinch ground black pepper
  • 1 medium egg

Assembly

  • 6 brioche burger buns, halved horizontally
  • 80 g mixed lettuce leaves, for serving
  • 1 - 2 beef tomatoes, sliced, for serving
  • 100 g feta cheese, crumbled, for serving
