Ingredients

  • 20 g dried porcini mushrooms
  • 40 g Parmesan cheese, cut into pieces (3 cm)
  • 200 g mixed vegetables (e.g celery, carrot and onion), cut into pieces
  • 1 garlic clove
  • 40 g olive oil
  • 400 g fresh mushrooms of choice, cut into quarters
  • 1 tbsp tomato paste
  • 50 g dry white wine
  • 400 g tomatoes, cut into quarters
  • 1 - 1 ½ tsp salt, to taste
  • ½ - 1 tsp ground black pepper, to taste
  • 1 tsp white sugar
  • ½ tsp Vegetable stock paste (see Tips)
  • 100 g water
  • 1 dried bay leaf
  • 1 sprig fresh rosemary, leaves only
  • 1 - 1 ½ tsp dried oregano
