  • 160 g white rice vinegar
  • 120 g sugar, adjust to taste
  • 10 dried chillies, rinsed, soaked and deseeded
  • 6 bird's eye chillies (chilli padi)
  • 1 tbsp light soy sauce
  • 2 tbsp dark soy sauce
  • 3 tbsp oyster sauce
  • 1 tsp salt
