Ingredients

  • ½ tsp dried fennel seeds
  • ½ tsp cumin seeds
  • 1 tsp coriander seeds
  • 2 tsp ground turmeric
  • 1 piece fresh ginger (2 cm), peeled
  • 4 garlic cloves
  • 1 - 2 long red chillies, deseeded if preferred
  • 4 sprigs fresh coriander
  • 1 tbsp olive oil
  • 100 g carrot, cut into pieces
  • 2 celery stalks, cut into pieces
  • 100 g red pepper, deseeded and cut into pieces
  • 2 tbsp soy sauce
  • 1 tbsp tamarind paste (see tip)
  • 1 tbsp oyster sauce (optional)
  • 1 tbsp brown sugar
    or 1 tbsp sugar
  • 900 g water
  • 300 g dried French green lentils (see tip)
  • 500 g raw sausage (e.g. beef or pork)
  • 270 g coconut cream
  • 60 g peanut butter
  • 150 g broccoli, broken into florets (3 cm)
  • 150 g cauliflower, broken into florets (3 cm)
  • 100 g fresh green beans, trimmed and cut into thirds
