Ingredients

  • ½ tsp dried fennel seeds
  • ½ tsp cumin seeds
  • 1 tsp coriander seeds
  • 2 tsp ground turmeric
  • 2 cm piece fresh ginger, peeled
  • 4 garlic cloves
  • 1 - 2 long red chillies, deseeded if preferred
  • 4 sprigs fresh coriander
  • 1 tbsp olive oil
  • 100 g carrot, cut into pieces
  • 2 celery stalks, cut into pieces
  • 100 g red capsicum, deseeded and cut into pieces
  • 2 tbsp soy sauce or tamari
  • 1 tbsp tamarind paste
  • 1 tbsp oyster sauce
  • 1 tbsp dark brown sugar
  • 900 g water
  • 300 g French green lentils
  • 500 g raw sausage (good quality, e.g. Angus beef)
  • 270 g canned coconut cream
  • 60 g peanut butter
  • 150 g broccoli, broken into florets (3 cm)
  • 150 g cauliflower, broken into florets (3 cm)
  • 100 g fresh green beans, trimmed and cut into thirds
