  • 60 g coconut flour (see Tips)
  • 80 g arrowroot flour, plus extra for dusting
  • 140 g buckwheat flour (see Tips)
  • 160 g unsalted butter, chilled, plus extra for greasing
  • 50 g caster sugar
  • 1 tsp natural vanilla extract
  • 50 g water
  • 2 egg yolks

Filling

  • 1 Granny Smith apple, peeled, cored and cut into quarters
  • 40 g soft dark brown sugar
  • 100 g dried cranberries
  • 100 g raisins
  • 50 g currants
  • 30 g mixed peel
  • 40 g dried blueberries
  • ½ lemon, zest (no white pith) and juice
  • ½ orange, zest (no white pith) and juice
  • 1 tsp ground cinnamon
  • ¼ tsp ground cloves
  • ½ tsp ground nutmeg
  • 60 g brandy
  • 1 egg, lightly beaten, for brushing
  • pure icing sugar, for dusting
