  • 6 stalks fresh lemongrass white part only
  • 3 garlic cloves
  • 15 g fresh ginger cut in slices
  • 70 g onion
  • 40 g shallots
  • 3 sprigs curry leaves
  • 1 tsp ground turmeric
  • 1 tsp ground fennel
  • 1 tsp ground coriander
  • 2 tsp curry powder
  • 1 tsp chilli powder
  • 2 tsp sugar
  • 1 - 2 tsp salt adjust to taste
  • 2 tbsp cornflour (starch)
  • 2 tbsp white rice flour
  • vegetable oil to deep fry
