- 700 g lamb shanks, fat trimmed, cut in cubes (3 cm)

- 2 tsp salt, adjust to taste
- 2 tsp chicken stock powder
- 2 - 5 bird's eye chillies (chilli padi), cut in halves
- 30 g fried shallots, to garnish
- 5 stalks fresh coriander, leaves only, chopped, to garnish
- 5 stalks Chinese celery, leaves only
- 2 sprigs spring onions, thinly sliced, to garnish
