  • 380 g aubergine cut in pieces (1-2 cm)
  • 80 g red onion sliced (0.5 cm)
  • 100 g red pepper cut in pieces (1-2 cm)
  • 3 - 4 pinches chilli powder
    or 3 - 4 pinches dried chilli flakes
  • 1 tsp fine sea salt
  • 2 tsp honey
  • 2 ½ Tbsp olive oil plus extra for greasing
  • 240 g lentils pre-cooked
  • 1 bunch fresh mixed herbs (e.g. parsley, coriander, mint)
  • 1 garlic clove
  • 1 tsp Dijon mustard
  • 20 g white wine vinegar
  • 20 g water
  • ½ tsp ground black pepper
  • 25 g olive oil
  • 1 - 2 Tbsp raisins
  • 200 g halloumi cheese
  • ¼ tsp dried mint
