Ingredients

Marinated chicken

  • 150 g boneless chicken thighs, cut in cubes (2 cm)
  • 1 tsp light soy sauce
  • 1 tsp sesame oil
  • ¼ tsp white pepper powder
  • 1 tsp cornflour (starch)

Stir fry udon

  • 2 garlic cloves
  • 20 g shallots
  • 30 g olive oil
  • 200 g bak choy, washed, stem and leaves separated
  • 150 g white shimeiji mushrooms, washed and separate
  • 30 g dark soy sauce
  • 10 g light soy sauce
  • 10 g oyster sauce
  • 1 tsp sesame oil
  • 50 g water
  • ½ tsp white pepper powder
  • 400 g udon noodles, soaked in hot water for 1 minute, rinsed
