  • 30 g wheat flour
  • 130 g caster sugar
  • 4 egg (from chicken), room temperature, separated and yolks reserved
  • 1 tsp vanilla extract, natural
  • 2 tbsp water, hot
  • 400 g cream, 35 % fat
  • 500 g strawberry, hulled, sliced lengthways, plus extra for decorating
  • icing sugar (may contain 3-5% anti-caking agent), for dusting
