Ingredients

  • 3 tbsp hot water
  • 1 pinch saffron threads (see Tips)
  • 2 garlic cloves
  • 20 g extra virgin olive oil
  • 100 g red onion, cut into quarters
  • 400 g canned cherry tomatoes, no-added-salt
  • 300 g skinless chicken thigh fillets, trimmed and cut into halves
  • 2 tsp dried oregano
  • ground black pepper, to taste
  • 20 g tomato paste
  • 1 tbsp Vegetable stock paste, salt free (see Tips)
  • 170 g broccolini, trimmed
  • 400 g canned cannellini beans, no-added salt, rinsed and drained
  • 50 g roasted red capsicum, cut into strips
  • 2 sprigs fresh parsley, leaves only, to garnish
