  • 10 g fresh coriander
  • 1 shallot, quartered
  • 1 red chilli, halved and deseeded
  • 180 g fresh pineapple, cut in cubes (1 cm)
  • 20 g freshly squeezed lime juice
  • ½ tsp fine sea salt
  • 1 tsp olive oil
  • 12 little gem lettuce leaves
