Ingredients

  • 200 g rice noodles dried
  • water boiling
  • 3 Tbsp groundnut oil for soaking and frying
  • 40 g dry-roasted peanuts, unsalted
  • 1 Tbsp palm sugar
  • 1 Tbsp fish sauce
  • 1 Tbsp soy sauce
  • 2 Tbsp tamarind paste
  • 150 g water plus 2 Tbsp
  • ½ tsp chilli powder
  • 80 g carrots cut in pieces
  • 60 g shallots halved
    or 60 g spring onions cut in pieces (3 cm)
  • 2 garlic cloves
  • 200 g chicken breasts cut in strips (1 cm)
  • 200 g firm tofu diced (1 cm)
  • 200 g fresh bean sprouts
  • 2 medium eggs beaten
  • 2 limes cut in wedges, for garnishing
  • dried chilli flakes for garnishing
