Chocolate Cake

  • 100 g peanuts, dry-roasted, unsalted
  • 115 g dried dates, pitted, halved
  • 2 large eggs
  • 30 g neutral oil, e.g. vegetable, canola, safflower
  • 1 tsp vanilla extract, natural
  • 200 g buttermilk
  • 100 g all-purpose flour
  • 30 g cocoa powder (all types)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 - 2 pinches salt

Cake Pops

  • 1 tbsp raspberries, freeze-dried
  • 30 g peanuts, dry-roasted, unsalted
  • 100 g peanut butter, crunchy, unsweetened
  • 400 g dark chocolate, in pieces (see Tip)
    or 400 g white chocolate, in pieces (see Tip)
  • 45 g neutral oil, e.g. vegetable, canola, safflower
  • coconut, shredded, unsweetened, raw or toasted, to coat (optional)
  • sugar sprinkles, coloured, to decorate (optional)
