Ingredients

  • 100 g quinoa of choice
  • water to soak
  • 20 g fresh coriander leaves only, plus extra to serve
  • 95 g natural yoghurt high protein (see Tips)
  • 1 ½ tsp Mexican chilli powder
  • 1 garlic clove
  • 15 g extra virgin olive oil
  • 20 g lime juice
  • 300 g skinless salmon fillets
  • 400 g canned kidney beans no-added salt, drained and rinsed (see Tips)
  • 180 g cherry tomatoes quartered
  • 100 g red onion thinly sliced
  • 75 g mixed salad leaves
  • 1 avocado (approx. 100 g), cut into slices
  • ground black pepper to taste
  • 1 long red chilli trimmed and thinly sliced, to serve (optional)
  • lime cut into wedges, to serve
