  • 80 g butter cold
  • 200 g cream, min. 30% fat
  • 1 tsp salt
  • 1060 g water
  • 2 tsp lemon juice (see tip)
  • 1 tbsp vinegar

Chocolate Mousse

  • 50 g sugar
  • 200 g milk chocolate cut in pieces
  • 30 g butter
  • 4 eggs separated
  • 1 - 2 pinches salt
  • whipped cream to decorate
  • milk chocolate in curls, for decorating
