  • 250 g white sugar or brown sugar
  • 200 g pouring (whipping) cream
  • 1030 g water
  • 1 tsp lemon juice (see Tip)
  • 30 g unsalted butter, chilled and added into mixing bowl in 1 piece (approx. 6 x 4 x 1 cm)
  • 1 tsp salt
  • 50 g vinegar

Ice cream

  • ½ vanilla bean
  • 600 g full cream milk
  • 200 g pouring (whipping) cream
  • 30 g white sugar
  • 6 egg yolks
