Ingredients

  • 350 g mixed fresh mushrooms halved or quartered if large
  • 50 g unsalted butter diced
  • 1 Tbsp fresh thyme leaves
  • 50 g stale bread torn in pieces
  • 1 lemon finely grated, zest only
  • 1 tsp fine sea salt plus 1 pinch to taste
  • 1 tsp ground black pepper plus 1 pinch to taste
  • 1500 g pork loin ready to stuff (see tip)
  • 300 g celery cut in pieces (2 cm)
  • 500 g carrots cut in pieces (2 cm)
  • 100 g cider, dry
  • 1 garlic bulb plus 1 clove peeled
  • 500 g floury potatoes (e.g. Maris Piper, King Edwards), sliced (5 mm)
  • 200 g milk
