  • 3 ½ oz vegetable oil, plus extra to grease
  • 7 oz all-purpose flour, plus extra to dust
  • 6 oz carrots (approx. 3 medium), peeled, cut into pieces, plus extra, sliced into curls, to garnish
  • 7 oz sugar
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp salt
  • ¼ tsp ground nutmeg
  • 8 oz canned crushed pineapple, in juice, undrained
    or 8 oz canned pineapple pieces, in juice, undrained

Cream Cheese Frosting

  • 3 oz cream cheese, chilled, cut into 4 pieces
  • 1 oz unsalted butter, room temperature
  • 2 - 3 tsp lemon juice
    or 2 - 3 tsp pineapple juice
  • 7 oz confectioners sugar
  • ¼ tsp ground nutmeg
