  • ½ tsp salt, to sprinkle, plus extra to season
  • 2 tbsp extra virgin olive oil, plus an extra 10 g
  • water, to cover
  • 80 g onion
  • 2 sprigs fresh basil, leaves only, plus extra to garnish
  • 100 g fresh mushrooms, sliced
  • ½ - 1 teaspoon harissa paste
  • 4 eggs
  • dried chilli flakes, to sprinkle
  • ground black pepper, to season
