Ingredients

Prune and orange stuffing

  • 1 garlic clove
  • ½ brown onion (approx. 70 g)
  • 20 g butter
  • 80 g pitted prunes
  • 2 sprigs fresh flat-leaf parsley, leaves only
  • 1 sprig fresh rosemary (approx. 10 cm), leaves only
  • ½ - 1 orange, zest only, no white pith, finely grated
  • 2 tsp orange juice
  • 30 g sunflower seeds
  • 100 g day old bread or crusty bread, frozen, thawed slightly and torn into pieces (3 cm), (approx. 2-3 slices)
  • 1 pinch sea salt
  • 1 pinch ground black pepper

Spicy Cajun rub

  • 160 g sea salt
  • 1 tbsp chilli powder
  • 1 tbsp ground smoked paprika
  • 1 tbsp dried onion flakes
  • 1 tbsp granulated garlic
  • ½ tsp ground cumin
  • 2 tsp ground cayenne pepper
  • 1 tbsp dried thyme
  • 1 tbsp dried basil
  • 1 tbsp dried oregano
  • 1 tbsp coriander seeds
  • ¼ tsp ground white pepper
  • 2 tsp ground black pepper

Whole chicken

  • 1000 g water
