Ingredients

Sloe Gin Jelly

  • 5 gelatine leaves, platinum grade
  • 80 g water, plus extra cold for soaking
  • 70 g caster sugar
  • 130 g sloe gin

Cava Cream

  • 300 g whipping cream, cold (see tip)
  • 30 g icing sugar
  • 170 g white sparkling wine (e.g. Cava, Prosecco)
  • 10 g lemon juice
  • 30 g caster sugar
  • 3 egg yolks, from medium eggs

Blackberry and Grape Coulis

  • 60 g frozen blackberries
  • 70 g seedless white grapes
  • 70 g caster sugar
  • 20 g lemon juice

Cava Meringue

  • 1 egg white, from medium egg
  • 40 g white sparkling wine (e.g. Cava, Prosecco)
  • 100 g caster sugar

Assembly

  • 6 - 8 sponge fingers, broken in pieces, plus extra crumbled for garnishing
  • 190 g seedless white grapes
  • 60 g fresh blackberries
