Ingredients

Arrabbiata sauce

  • 2 garlic cloves
  • 1 brown onion, cut into halves
  • 1 fresh red chilli, to taste, deseeded if preferred and cut into pieces
  • 20 g extra virgin olive oil
  • 800 g canned crushed tomatoes, no-added salt
  • 2 sprigs fresh basil, leaves only, roughly torn
  • ¼ tsp ground black pepper

Spinach-cheese filling

  • 65 g Gruyère cheese, cut into pieces (3 cm)
  • 25 g Parmesan cheese, cut into pieces (3 cm)
  • 2 garlic cloves
  • 150 g brown onion, cut into halves
  • 10 g extra virgin olive oil, plus extra to grease foil
  • 2 sprigs fresh basil, leaves only
  • 500 g frozen spinach, thawed and drained
  • 2 eggs
  • 720 g ricotta, low fat
  • 2 pinches ground nutmeg
  • ¼ tsp ground black pepper
  • 8 wholemeal lasagne sheets (approx. 250 g)
  • 120 g mixed salad leaves
