Ingredients

Flaky Pastry

  • 200 g unsalted butter, cut in pieces (1-2 cm) and frozen
  • 200 g plain flour, plus extra for dusting
  • 90 g water, cold
  • ½ tsp fine sea salt

Caramelised Onions

  • 1 garlic clove
  • 20 g unsalted butter
  • 110 g streaky bacon, cured and smoked, cut in strips (2 cm)
  • 250 g onions, cut in eighths, layers separated
  • 20 g dark brown sugar
  • 20 g balsamic vinegar
  • ½ tsp fine sea salt

Chicken Filling

  • 600 g water
  • 500 g chicken breast fillets, skinless
  • 220 g sweet potato, peeled, cubed (2 cm)
  • 3 sprigs fresh thyme, leaves only, plus extra for garnishing
  • 1 - 2 pinches fine sea salt
  • 1 - 2 pinches ground black pepper
  • 150 g fresh mushrooms, quartered
  • 40 g unsalted butter
  • 30 g plain flour, plus extra for dusting
  • 1 tsp chicken stock paste, homemade
    or ½ chicken stock cube (for 0.5 l)
  • 50 g whipping cream
  • milk, for glazing
