Ingredients

  • 2 garlic cloves, peeled
  • 1 leek, trimmed, white part only, well washed and cut into pieces (3 cm) - green part reserved
  • 1 - 2 fresh long red chillies, deseeded if preferred, and cut into halves
  • 30 g extra virgin olive oil
  • 500 g tomato passata
  • 50 g water
  • 1 chorizo sausage (approx. 220 g), cut into thin slices
  • 2 sprigs fresh basil, leaves torn
  • 2 pinches ground black pepper, to taste
  • 600 g cooked gnocchi, to serve (see Tips)
  • Parmesan grated, to serve
