  • 100 g pouring (whipping) cream
  • 90 g white sugar
  • 3 egg yolks
  • 1 tbsp cornflour (see Tips)
  • 1 pinch sea salt (optional)

Pineapple coating

  • 1 lime, peeled, no white pith, pips removed (optional - see Tips)
  • 100 g coconut water
  • 350 g fresh pineapple, peeled and cut into pieces
