Ingredients

Fish burgers

  • 2 cm piece fresh ginger, peeled
  • 2 garlic cloves
  • 6 sprigs fresh coriander, leaves and stalks
  • 500 g firm white fish fillets, cut into pieces (2-3 cm)
  • 1 tbsp fish sauce
  • 1 tbsp kecap manis
  • salt, to season
  • ground black pepper, to season
  • 100 g panko breadcrumbs
  • 2 tbsp plain flour
  • 1 egg
  • 2 tbsp milk

Red cabbage salad

  • 50 - 80 g red cabbage, finely shredded
  • 6 - 8 snow peas, cut into thin slices
  • ¼ cucumber, deseeded and cut into thin slices
  • 1 tbsp lime juice
  • 2 tsp fish sauce
  • 2 tsp brown sugar

Chilli mayo

  • 50 g mayonnaise (see Tips)
  • 1 - 2 tbsp hot chilli sauce, to taste

Assembly

  • 1 - 2 tbsp oil, for frying
  • 3 bread rolls, cut into halves horizontally (see Tips)
