Ingredients

Lamb meatballs

  • oil for greasing
  • 2 garlic cloves
  • 200 g onions, cut into quarters
  • 10 sprigs fresh parsley, leaves only
  • 10 sprigs fresh mint, leaves only
  • 10 sprigs fresh coriander, roughly cut
  • 1 tsp Arabian spice mix
  • 2 tsp ground sumac
  • 1 tsp salt, adjust to taste
  • 1 pinch freshly ground black pepper, adjust to taste
  • 500 g lamb mince

Steamed meatballs, spicy tomato rice and sauce

  • 250 g basmati rice
  • 2 tsp coriander seeds
  • 3 garlic cloves
  • 200 g onions, cut into quarters
  • 30 g olive oil
  • 2 fresh green chillies, cut into halves and deseeded
  • 900 g ripe tomatoes, cut into quarters
  • 1 heaped tsp vegetable stock paste, homemade
    or 1 vegetable stock cube (for 0.5 l)
  • 1 tsp dried oregano
  • 1 tsp salt, adjust to taste
  • 1 tsp freshly ground black pepper, adjust to taste
  • 300 g water
  • 1 heaped tbsp cornflour (starch)
  • 5 sprigs fresh coriander, finely choppped
