  • 450 g red onions, halved
  • 80 g bacon cubes
  • 1 heaped tsp chicken stock paste, homemade
    or 1 chicken stock cube (for 0.5 l), crumbled
  • ½ Tbsp dried herbes de Provence
  • 200 g red wine
  • 100 g water
  • 500 g floury potatoes, skin on, cut in cubes (3 cm )
  • 4 - 5 chicken thighs, skinless, boneless (approx. 550 g)
  • 250 g fresh mushrooms, quartered
  • 1 Tbsp fresh parsley, chopped, to garnish
